One trick after catching the fish is to dispatch it mercifully with a shot of tequila or vodka in the gills, rather than beating the fish over the head. Some people drag it in the water to let it bleed out but there is some risk a bigger fish, such as a shark, will eat it.
Most importantly make sure the filet knife is very sharp. Cut away in a motion from hands. Be very careful so knife does not slip. The process once practiced only takes about 10 minutes.
